VINIFIED IN TERRACOTTA JARS: the natural vinification in a jar, with native yeasts, preserves and conveys at best all the varietal features of the vine.

Terracotta is a natural material with an added value, if compared to wood, because it doesn’t give aromas   and doesn’t change the organoleptic aspect of the wine, thus keeping the identity profile at its full potential. In addition, terracotta is a breathable material, therefore wines are micro-oxygenated during the ageing in a natural way, without any human intervention. Grapes are put to ferment in the jars where they macerate on the skins which undergo regular punching down, in order to obtain a proper course of fermentation and the highest extraction of aromatic compounds.

The wine stays in the jar for fourteen months and then it is bottled by hand, without suffering any infiltration.

PRODUCTION AREA:

A gentle hill exposed to Grecale and Maestrale winds
Vineyard elevation: 270 m a.s.l.
Soil type: sandstone matrix with strong skeleton inclusion

THE VINEYARD: the grapes are grown organically with a minimized use of chemicals; they are treated if necessary with limited quantities of natural products (based on essential oils and seaweed) and fed with organic substances, earthworm humus and green manure.

THE HARVEST

Picking time: second half of September

Picking method: the grapes are hand-picked very early in the morning, in the dark, because then they still have the coolness of the night, that is the perfect temperature for pressing.

WINEMAKING METHOD: the grapes are destemmed and lightly pressed. The fermentation happens spontaneously through the native yeasts (without any use of selected yeasts). During fermentation, the must undergoes a regular punching down consisting of manual mixing of the liquid part with the skins without the use of pumps, in order to ensure the maximal gentleness in the extraction of the aromatic substances. The fermentation is followed by a period of maceration of about twenty days, after which we proceed to the racking.

TASTING NOTES:

Sight: wine is clear with a bright and intense ruby red colour.
Smell: it reveals a great olfactory impact; the fruit notes integrate harmoniously with the typical spicy notes of the vine.

Taste: a great structure, with a surprising balance between the tannic, alcoholic and acid components. Long and persistent finish. A wine for special occasions!!!

WINE PAIRINGS: this wine goes perfectly with the typical Maremma cuisine, which is rich and tasty. The wine can be served with various appetizers (as for example typical cured meat, or Tuscan crostini with chicken liver), or with first courses with meat sauce. Thanks to its intense and full-bodied flavour, it goes excellently with red meat, especially with roasts and casseroles, but also with grilled meat and stews.
